A BIG question mark had been hanging over the Duke of Wellington redevelopment since June, when Paul Mathis walked away from a retail lease for the site on the corner of Flinders and Russell streets. Now comes the news that an established group of city bar operators has taken up the challenge. They will run a pub, wine bar and restaurant over three refurbished floors of Melbourne’s oldest pub and are now on the hunt for a chef to help them make their mark on the dining scene. “They’re looking to build a landmark in Melbourne and food has to play a big role,” says industry consultant Erez Gordon, who is remaining coy on the identity of the new owners.
